  • Gooseberries cannot be taken overripe. The fact is that this berry quickly becomes moldy and deteriorates. Only ripe berries are suitable for winemaking, and even they need to be carefully sorted out so as not to leave a single spoiled or stuck leaf.
  • Washing gooseberries is not recommended: they make excellent wine without the addition of wine yeast, if wild yeast is preserved on the surface of the berries.
  • It is not worth postponing the start of making gooseberry wine until tomorrow, because during storage it loses its aroma, which will cause the bouquet of future wine to suffer. You need to process the berry on the same day that it was harvested.
  • It is unacceptable to strongly dilute gooseberry juice with water, as this will greatly increase the risk of must disease. The maximum allowable amount of water is twice the amount of pure juice obtained from the berries. Cooking method:

Gooseberry wine with lemon

  • gooseberries - 3 kg;
  • lemon - 2 pcs.;
  • water - 5 l;
  • sugar - 2.5 kg.

Ingredients:

  • Gooseberry fruits - 3 kg;
  • Sugar - 2 kg;
  • Water - 3 liters.

Cooking:

  1. Collected gooseberries, clean from leaves and debris, remove spoiled and withered fruits. Using a mixer or pusher, chop, mash the unwashed berries and place the mass in a glass container or an enamel pan.
  2. Prepare syrup from sugar and water. During boiling, remove the formed foam from the surface, cook the syrup for 5-10 minutes over low heat. Cool the syrup to 20-25°C.
  3. Pour the syrup into the berry porridge, stir the mass. Close the mouth of the container with gauze. Since the wine is prepared without yeast, it is necessary to start the fermentation process using wild berry yeast. Leave the pulp warm for fermentation for 3-4 days.   4. Squeeze the juice from the pulp through a sieve or colander, squeeze the pulp separately using several layers of gauze. Pour all the juice into a fermentation container, which can be a glass bottle or a plastic food container. It is important not to fill the container to the top, leave room for foam and carbon dioxide. Install a water seal or an ordinary rubber medical glove on the container, in which one finger is pierced with a needle.
  5. Put the bottle in a warm place with a temperature of 20-25°C. Usually fermentation lasts 30-45 days. You can determine the end of fermentation at the end of gas evolution, the glove puffs out, the water seal stops gurgling. Young wine is partially clarified, a layer of sediment appears at the bottom.
  6. Young gooseberry wine is carefully drained from the sediment (decanted) with a thin hose and poured into clean dishes. At this stage, the wine can be sweetened to taste.

How to fix homemade gooseberry wine

Wine made at home usually has a strength of about 8-12 degrees. To increase the strength during production, you need to use special yeast and increase the amount of sugar. The increase in alcohol in wine contributes to the long-term storage of the drink. Sometimes strong alcohol is added to wine for this: vodka, alcohol, cognac or brandy. The addition of vodka or alcohol stops the fermentation in the wine and acts as a preservative. Fortified gooseberry wine can be stored for several years without loss of quality and taste.

  5. The young wine, drained from the sediment, is poured into another container, closed with a lid, transferred to a cool place for maturation, which lasts 3-4 months. The resulting sediment must be drained. The finished home-made wine is bottled and sent for storage. Natural, delicious gooseberry wine can be stored for up to two years.

Advice! Use distilled, purified, bottled water or, in extreme cases, boiled, settled water.

Dessert sweet red gooseberry wine


I will describe my favorite simple recipe for making homemade dessert wine from ripe sweet gooseberries.

  • Red gooseberry - 7.1 kg;
  • Water - 3.6 liters;
  • Sugar - 3.8 kg.

Cooking:

  1. We collect ripe, red gooseberries. It will make about 12 liters of dessert wine of a beautiful, pink color. Berries should not be overripe or unripe. We clean the collected fruits from debris, grind the unwashed ones in a convenient way, place them in a glass or enameled container. Pour in the syrup and water, stir, cover with gauze in two additions, leave at 20 degrees for 4 days for fermentation. We mix the wort a couple of times a day, drowning in it a rising hat of pulp.
  2. I will tell you more about syrup, sugar and water. To begin with, take 7 cups of sugar, the same amount of water and boil the syrup for 7 minutes, removing the foam. Cool it down to room temperature. Boil the remaining water, also cool. The rest of the sugar will be used later.
  3. On the fifth day, we filter the fermented mixture, place it in bottles, install a water seal or put on a rubber glove pierced with a needle. We put in a warm, dark place until the end of fermentation. It will take 35-45 days.
  4. After two weeks from the start of the process, you need to add 6 cups of sugar. To do this, using a tube, drain the required amount of wort, dissolve sugar in it, carefully pour back. A week later, we do the same with the remaining sugar.
  5. After the completion of active fermentation, we try the young wine for sweetness. You can sweeten it if you wish. Remove the bottles with the wine removed from the sediment to a cooler place for clarification. The maturation process will take three months. During this time, you will have to pour the wine several times into a clean container, when sediment appears. The finished wine is bottled, closed, stored in the cellar.

Wine from gooseberries with vodka


This recipe is for wine lovers. Usually homemade wine is weak, about 12 degrees. But if you wish, you can add vodka to it, then the strength of home-made wine will increase to 20 degrees.

For manufacturing we need:

  • 1.5 kilograms of gooseberries;
  • 1 kilogram of sugar;
  • 1.5 liters of water;
  • Vodka.

The quality of wine largely depends on the berry. Therefore, gooseberries must be ripe, in no case overripe or green. Also, do not take berries that are rotten or moldy. It is advisable to use the gooseberry after it has been removed from the bush, in extreme cases, the berries can lie for no more than a day.

Mash the selected berries or twist in a meat grinder. We need to get gruel from gooseberries.

Attention! The berry should not be washed; natural yeast is on its peel. If the gooseberries are harvested from the ground or dirty, they must be washed and dried. In this case, add a third of a glass of unwashed raisins to the gruel. He will play the role of yeast.

  • Now let's make the syrup. Pour sugar into water, put on fire. After the sweet water boils, boil it for five minutes. Stir occasionally and skim off the foam.
  • Pour the gooseberry mixture with cold syrup. Mix well, pour into a large saucepan, close the lid. The mixture is left warm for four days, while stirring every day. During this period, we will be able to observe how the fermentation process takes place. The pulp will rise like a hat over the must, and on the fourth day the future wine must be filtered.
  • Strained wort is poured into bottles on the shoulders, we install a water seal. We make an incision in the nylon cover, insert the tube, cover the incision with plasticine so that air does not pass. We close the bottle, lower the other end of the tube into a glass of water. We leave the wine warm, the temperature in the room should be 20-25 degrees, for about 30-40 days.
  • After the wine stops fermenting, it will be lighter, sediment will appear. Now it can be separated from the sediment by pouring into a clean container. At this point, you can try the drink and decide on the taste. If you think that the wine is sour, you can add sugar. For the strength of the wine, add vodka, at the rate of 100 milliliters per 1 liter of wine. Now we pour the wine into glass bottles, jars. We put in a dark cool place for five months. During this time, a precipitate will appear, the wine must be filtered again.

An excellent drink is ready.

Quick house wine


Good wine takes time. But you can "cheat" and get a pretty tasty wine drink much faster. Take note of the following recipe for making homemade quick gooseberry wine.

  • Gooseberry;
  • Sugar;
  • Water.

Ripe gooseberries are sorted out, not washed, poured into a bottle. We fill 1/3 of the jar with gooseberries, put the same amount of sugar, pour water over the shoulders.

A simple recipe with a glove produces a good quality sparkling wine.

Prepare:

  • Gooseberries - 3 kilograms;
  • Water - 5 liters;
  • Sugar - 2 kilograms.
