Beetroot dishes for children. Meals for children from one to three years. Salads Beetroot salad for a child of 1 year

In winter, when we all lack vitamins, we often forget that there are the most familiar foods nearby that are very beneficial for our health. These include beets (buryak - Ukrainian), which have unique properties, which we will talk about today.

Firstly, beets, unlike other vegetables, retain useful trace elements and vitamins all year round, for example, ascorbic acid, vitamins of group B, P and PP, carotenoids and folic acid, as well as pectin substances and pigments, salts of cobalt, manganese, magnesium and potassium . Root crops are also rich in glucose, fructose and proteins, fiber, organic acids, etc.

Secondly, salts of calcium, phosphorus and iron, which are very abundant in beets, regulate calcium-phosphorus metabolism and activate hematopoiesis. Therefore, people who systematically consume beets do not suffer from low hemoglobin. And beet magnesium calms the nervous system.

Third, beets contain betaine, which promotes growth. And pectin substances, which are rich in beets, adsorb harmful substances and remove them, promote the formation of glycogen, and inhibit the activity of harmful putrefactive bacteria.

If you or your baby do not like beets, you can use the tops for dishes. It is also rich in vitamins and minerals, but beet leaves contain more vitamin C and less fiber. Add finely chopped leaves to soups, borscht, vegetable dishes like greens.

Beets can be safely added to the nutrition of babies after a year. In the form of canned baby puree, you can try to give it earlier (read the instructions), but be sure to watch out for allergic reactions. They begin to offer freshly prepared beets to the crumbs in a mashed form - mashed potatoes, but in small portions. And to give beetroot dishes a pleasant taste, you can use sour cream (up to 10%) or cream. Remember that vinegar and mayonnaise are not added to the dishes of young children.

From beets for kids, you can cook a variety of salads, vinaigrettes, borscht, vegetable side dishes.

When to start giving beets?

It is better for children with the manifestation of diathesis to start eating beets after a year.

The optimal age when a child can begin to give beetroot puree is 7-8 months.

Beets are one of the last to be introduced among all vegetables. This is due to the fact that it causes allergic reactions more often than others.

Beetroot contains a lot of fiber, it has a laxative effect. This occurs due to increased intestinal peristalsis and accelerated movement of feces.

If the baby is breastfed, then the mother can try the beets herself and see the reaction of the child.

How to introduce beets?

The most optimal way to introduce beets into the baby's diet is to give it in the form of mashed potatoes. It can be consumed both as an independent dish, and as part of complex purees and with the addition of meat. Babies eat especially well homemade mashed potatoes, cabbage and beets.

We introduce gradually, starting with ½ teaspoon.

Always start introducing new foods into your diet in the morning to see if there is an allergic reaction.

  1. Beets should be washed.
  2. You need to cook it for a long time, about 1.5 hours.
  3. The readiness of the beets is determined with a knife. If the knife goes smoothly to the middle of the beets, they are ready.
  4. After that, the water must be drained.
  5. Pass the cooked root crop through a blender or meat grinder, then grind through a sieve for uniformity.
  6. Beetroot puree can be stored in the refrigerator for no more than a day. So there is no need to do too much.

Be sure to add ¼ teaspoon of vegetable or olive oil to the beet puree.

It is better to start introducing beets for a child as part of other vegetables - cauliflower, zucchini. Then, when the baby gets used, you can give it as a separate dish.

By 10-12 months, if the baby has teeth, you can make beetroot salads with sour cream, vinaigrettes. Beetroot salad for children will perfectly complement the lunch with its pleasant taste.

Cooked salad can not be stored in the refrigerator for more than a day, it loses its beneficial properties.

By the year, the baby can consume up to 50 grams of beets, but not more than 2 times a week. Children older than a year can be given up to 100 grams. In vegetable salads, beets should be present up to ¼ of the entire dish.

A boiled root vegetable gives more benefits than raw beet juice. During heat treatment, nitrates are destroyed. So beets are better absorbed in a small body.

This kind of juice should not be given if the child:

  • diabetes;
  • tendency to loose stools;
  • kidney disease;
  • gastritis with high acidity.

The allowed age for beetroot juice is 12 months.

Be sure to dilute it with water or other juices. This is due to the fact that beets irritate the lining of the stomach and intestines.

Beets turn urine pink and feces burgundy. Don't be alarmed if you see these changes in the pot.

Dr. Komarovsky E. O .: “Certainly, beets are important in the life of both an adult and a child. Contains a lot of trace elements, vitamins, which are useful to all organs and systems. Also, beets have a pleasant sweet taste, and children are known to love sweets. Buy beets in trusted stores, but rather grow them yourself. ”

The baby does not eat beets

A child cannot be force-fed. This may make him averse to food in general. Try to “hide” beets in cottage cheese casseroles, pancakes, cheesecakes, salads. So the child will not understand the content of beets in the dish.

Children's diet needs to be replenished with new foods and tastes. Do it gradually and correctly. Then your baby will be healthy.

On the recommendation of pediatricians, vegetable purees are introduced into the menu of babies after 6 months. Boiled beets should appear in the child's diet a little later. This vegetable has a lot of useful properties, but with early or incorrect acquaintance with it, the body of a newborn can be harmed. At what age and in what form should beets be given to the baby? To answer this question, you need to find out how this root crop acts on the child's body.

The benefits of beets for children

The composition of beets includes many vitamins and other chemical elements that are useful to the child. This root crop is perfectly stored throughout the year, so it is especially important in spring and winter, when there is not enough fresh vegetables and fruits. For children, the following useful qualities of this vegetable are of greatest importance:

  • high content of fiber, which normalizes stools, increases appetite and maintains a healthy bowel;
  • a sufficient amount of vitamins A, C, E, K, folic acid, calcium, magnesium, potassium, without which the normal development of a child of any age is impossible;
  • the presence of antioxidants that reduce the risk of developing cardiovascular diseases;
  • the ability to stimulate the production of red blood cells due to the high concentration of iron in the composition, which is very important for the development of the brain of children, especially the first year of life;
  • the content of betaine - a plant compound that protects the children's liver;
  • the presence of pectin acids acts as a laxative for babies suffering from constipation.

What is harmful beets for babies?

Despite all the useful properties of the root crop, it is impossible to give it to a child as the first vegetable complementary foods. Beets can have harmful effects on a newborn:

  • it has the ability to accumulate nitrates absorbed in large quantities from the soil, with which the child's body can easily be poisoned;
  • the root crop itself and its juice often cause allergies in children;
  • excessive consumption of beets can cause diarrhea in the baby.

However, the harm of this vegetable can be minimized if you follow simple rules. The product must be given to the baby only in the amount recommended by doctors for his age. It is best to include beets from your own garden in your child's diet. If this is not possible, you should choose small maroon roots without light veins on the cut. These signs indicate that the vegetable contains a minimum amount of nitrates. You should know that newborns are given only heat-treated beets.

Harmful for babies and freshly squeezed beetroot juice. This drink is very useful for adults, but it is not suitable for children's food. Beetroot juice contains a lot of fruit acids, which irritate the delicate lining of the stomach and intestines of a newborn. In addition, the juice is not subjected to heat treatment, so it contains a lot of nitrates. After a year, with a tendency to constipation, pediatricians recommend giving up to 60 ml of such a drink per day to a baby, be sure to dilute it with water.

Suitable age for beetroot feeding

From what month can you feed your baby with beets? Most pediatricians recommend giving this root vegetable to babies after they reach 8 months. First, boiled beets in the form of mashed potatoes are included in the child's menu. The first serving should not exceed half a teaspoon. It is better to give beets to a child in the morning, in order to easily track the reaction of his body to a new product. With normal tolerance of the vegetable, the portion can be increased daily by ½ teaspoon, gradually bringing the total volume to 5 teaspoons per day. If the baby is not prone to constipation, it is enough to feed him beetroot puree twice a week.

For a child who has had problems with stools (constipation) since birth, the doctor may prescribe beetroot complementary foods from the age of 5 months. To achieve a laxative effect for a newborn in six months, 1 teaspoon of puree is enough. In agreement with the pediatrician, for the same purposes, beet juice can be given to the baby. A child with a tendency to allergies or suffering from intestinal colic should not be given beetroot and juice from it for at least 12 months.

In what form should beets be introduced into the children's diet?

Raw root vegetables contain more vitamins, but only boiled beets are suitable for feeding babies. A thermally unprocessed vegetable has a strong irritant effect and often causes allergies. When beets are boiled, some of the vitamins are destroyed, but the amount of fruit acids that adversely affect the children's digestive system also decreases. In addition, during the cooking process, almost all nitrates pass into beetroot broth. The most useful elements for children: fiber, pectin, betaine, iron, magnesium and some others are preserved.

How to cook beets for a child? It is necessary to lower a small root crop into boiling water, after cutting off its upper part, where the largest amount of nitrates accumulates. You don’t need to add salt: firstly, the vegetable will cook longer in salt water, and secondly, it is not recommended to add salt to food for children of the first year of life. When 40 minutes have passed, remove the beets with a slotted spoon and place them in ice water for 20 minutes. Thanks to this trick, the root crop will become soft even after a short boil.

You can not feed the child only beetroot puree. Boiled beets should make up no more than 30% of the total volume of the dish. You can mix it with other vegetables: zucchini, potatoes, cabbage, pumpkin. By 12 months, a child should receive no more than 12 teaspoons of beets per day.

After a year, the baby can be offered different dishes based on beets. Children like vinaigrette, beetroot soup, casserole, stew, beetroot salad, beetroot fritters. It is better to include boiled or steamed dishes in the child's diet. When the baby is 12 months old, he can also receive beetroot juice in moderation. Advice

If you are concerned about your child's reaction to these foods, consult your pediatrician.

Each salad has 6 children's portions.

First, salad number 1 - with beets and apples. Elementary simple, light and, due to the rather large number of apples, fresh and juicy.

Beets are thoroughly washed and boiled until fully cooked. Cooking time always depends on the size of the beets. I had with a small fist, cooked in a pressure cooker for about 30 minutes. If the knife easily and freely enters the beets, then it is ready. Drain the water, cool the beetroot and peel it.

Wash the apple, peel and remove the seed nest.

Cut both the beetroot and the apple into small strips.

The salad is dressed with refined vegetable oil (odorless), salt and citric acid. Since I don’t buy or use citric acid, I changed it to a teaspoon of freshly squeezed lemon juice.

Stir and serve as an independent dish or side dish.

The next salad, at number 2, with the beautiful name "Dawn".

Wash the beets thoroughly, boil until tender, cool and peel.

We take a small egg, weighing about 50 grams. It must be washed and boiled until tender - 10 minutes after boiling water. Next, drain the boiling water and pour cold water, hold the egg there for a couple of minutes, and then select, peel and chop.

Peel the onion, blanch in boiling water and chop finely.

Scald canned peas with boiling water.

Cut beets into small cubes.

Add all ingredients to a bowl and season with lemon juice, salt and vegetable oil. Quite a dish on its own.

For myself, I added chopped sauerkraut to this salad and got almost a vinaigrette to taste. By the way, already in the nursery, not only sauerkraut, but also sauerkraut are introduced into the children's menu. At least, in the technological map of the kindergarten, I found a vinaigrette with the addition of both cucumbers and sauerkraut.

Well, the third option is beet caviar.

For her, as well as in the two previous options, rinse and boil the beets until tender. Then let it cool down and clean it.

Peel the onion and cut into small cubes.

Put a frying pan on the fire, heat it, pour in the vegetable oil and add the onion. Saute, stirring, for about 5 minutes. Make a small fire, because we do not need frying, but a tender, transparent, juicy onion.

After about 5 minutes, add a teaspoon with a slide of tomato paste to the onion, mix and fry for another couple of minutes.

Cut the beets into small cubes or grate, as I did. Add to the pan to the onion, mix everything, close the lid tightly, make a minimum fire and simmer for 12-15 minutes. A couple of minutes before readiness, add salt, sugar, lemon juice and mix everything well.

We spread the caviar from the pan and let it cool. It can be served as a side dish, or on toast, like a sandwich. Personally, I add myself a clove of garlic, ground pepper, coriander and brown bread passed through the press ... Well, I really like it.

I noticed that if the onion is not subjected to heat treatment, but goes into the salad raw, then it must be scalded with boiling water before being cut.

My youngest child in childhood did not like either the raw onion itself or its crunch, so I replaced it with a finely chopped apple ... if, of course, it was appropriate. For me, the combination of apple and beets is very harmonious.

Well, that's all I wanted to tell you about. Choose, try, I hope your kids will like at least one of the options. After all, vegetables in the children's menu is an important component.

Bon appetit everyone!
